This recipe looks good, and it would be really easy to make it vegan. Substitute the butter with your vegan alternative or use olive or avocado oil instead. For the cream use coconut or soy alternative. Looks like a quick, tasty, healthy meal.

These look so good! I am going to try some of them, the black bean stew in the picture has me wanting it.

This recipe looked especially tasty and fall is here, so I was quite attracted to it.
I am editing my past posts for accuracy. At the time of this post, the 3rd post in my brand new blog, Almost Vegan, and at that time I was a brand new vegan, well almost vegan, because I had no idea what I was doing. I made a mistake in missing the “lactose” in the ingredient list in Knorr vegetable mix. Frankly, I am glad I did, and it forms the basis of what being almost vegan is all about.
Knorr might have small amounts of lactose in that mix, but let’s be serious, if you put all the other vegan ingredients into this dish and that is the only trace of dairy, you are doing really well. And this stuff kicks ass! So lie and say it’s vegan.
Knorr vegetable recipe mix is a “may contain” for milk. — Good enough!
I kid you not! I am so excited about this… “They’re even more convincing than the burger,” Crossroads chef Tal Ronnen says of the new nuggets. “They’re insane.”

Hearty, nutritious recipe from Jane Goodall’s cookbook, #EatMeatLess: Good for Animals, the Earth, and All.
This falafel curry is a brilliant way to serve falafel, coated in a creamy, spicy sauce – it makes such a hearty, filling curry! Perfect served over rice or with naan bread for dipping.
I am sorry. I am bad with comments. I have had this blog since 2004 and at times, the comments part has gotten the best of me. You have no idea what spam is until you have a blog.
So, I missed this cool, very valid comment. So sorry:

Hey! I wanted to make you aware of a new alternative meat source called water lentils! A company in Florida is growing water lentils to be used in alternative milks, meats, and dietary supplements but they’ve also just discovered that water lentils are the only source of plant-based Vitamin B12! Definitely think you should check it out and maybe could be a good story for your page! Check it out at trywaterlentils.com

This is from Georgina, who I think works there, and I am so embarrassed that I missed this Georgina!
Good luck with it. Sounds great.
